Challenge
The restaurant required a back-of-house capable of handling a wide variety of dishes and fluctuating kitchen workload during service. The key priorities were to ensure versatile thermal processing capabilities, streamline the preparation of semi-finished products, and guarantee stable refrigeration along with efficient dishwashing processes under intensive operating conditions.
Solution
At the Nowa Maja Restaurant, we carried out a comprehensive modernization of the kitchen infrastructure, which now operates more efficiently and meets the demands of modern gastronomy.

Rational electric combi oven – an intelligent cooking system with multiple modes, enabling frying, baking, and grilling. Its network connectivity supports process automation and ensures consistent results.

Rational iVario Pro 2-S multifunctional cooking system – combines cooking, frying, deep-frying, and pressure cooking functions, replacing several traditional appliances and saving valuable kitchen space.

TECHNICA two-door refrigerator and freezer cabinets – ensure safe storage of fresh products, supporting food quality control and safety.

Hood-type dishwasher with electronic controls – features an LED panel and built-in dispensers for ease of use, maintaining workflow efficiency even during peak hours.

MA-GA vegetable slicer – accelerates ingredient preparation with quick and precise slicing of vegetables, fruits, and cheese.

MA-GA meat grinder – suitable for continuous operation, allowing the team to easily prepare fillings or minced meat for main courses.

Robot Coupe cutter-grinder – assists in preparing fillings, sauces, emulsions, and seasonings, increasing both speed and precision.

REDFOX electric tilting frying pan – allows for efficient frying and grilling on a larger scale, simplifying meal preparation for multiple guests at once.
Thanks to these solutions, the restaurant’s kitchen has become a modern, comfortable, and highly functional workspace.
Results
The implemented solutions significantly improved kitchen workflow organization and increased efficiency during peak service hours. The team gained better control over production processes, which resulted in greater consistency of dishes and reduced preparation times.
